scripts: Scripts that defaulted to -v2 now default to -v3.

This is a followup to e45ef9a648.

* guix/scripts/archive.scm (%default-options): Change 'verbosity' to 3.
* guix/scripts/build.scm (%default-options): Likewise.
* guix/scripts/copy.scm (%default-options): Likewise.
