* gnu/packages/graphviz.scm (python-graphviz): Update to 0.21.
[source]: Switch to git-fetch.
[arguments] <test-flags>: Ignore running tests from "tests/backend" in
the default 'check phase.
[phases] {check}: Use default phase.
{patch-pytest-options}: Re-point to pyproject.toml and exclude test
coverage checks.
{pre-check, test-backend}: New phases.
[native-inputs]: Remove unzip.
