gnu: gnote: Update to 48.2.

* gnu/packages/gnome.scm (gnote): Update to 48.2.
[#:phases]: Update ‘skip-gtk-update-icon-cache’ accordingly.
[native-inputs]: Remove python.
[inputs]: Remove gspell.  Replace gtk+ with gtk and gtkmm-3 with gtkmm.
Add libadwaita.
