Variables gnucash and gnucash-docs have to be updated together.

* gnu/packages/gnucash.scm (gnucash)[version]: Update to 4.10.
(gnucash-docs)[version]: Update to 4.10.
[build-system]: Migrate from gnu to cmake.
[arguments]: Disable tests.
