* gnu/packages/python-check.scm (python-pyinstrument): Update to 5.1.1.
[arguments] <test-flags>: Rework skipped tests.
<phases>: Remove build-extensions; add 'pre-check,
containing removal of local pyinstrument instead of re-building
extensions.
[native-inputs]: Remove python-wheel.
